Need advise on fan setting/therm combo...

I'm in the process of ordering a microtuner for my 02. Jim at Superchips says I need to let him know at what temp I want the fans to kick on, as it's not adjustable. I've not changed the thermostat yet, and was hoping to get some opinions as to what would be a good combo as far as the fan setting and thermostat.
I've used a 160 for my f-bodies w/no problems. Jim suggested setting the fan at 180. If I go with the 180 setting, what about the therm? 160, 172, 178, or 180?
Any comments greatly appreciated.

Bob.... I was at SuperChips two weeks ago when they made a custom dyno tuned program for my Corvette. Robert was the guy who worked on my car and he set the fans at 196. Before the car ran about 220 now it stays at 194-196. They do some great work. I love the changes he made to my car. Stock thermostat
