I understand your pain. Unfortunately, there is definitely a trade-off at our power level. I don't find the Nitto DRs to be bad in twisties, but I'm also not trying to pull 1g on a 2-lane country road here in N. Texas. However, I drive spiritedly in the corners and don't have an issue... but I'm not doing 100+, either.
The BFG DRs are absolutely horrendous in any kind of turning manuever (quick lane changes, even mild corners make you feel like the rear end is going to come around), so I will never use those again for anything but drag racing. Everything I've read about the MT drag radials make it sound like they are more like the BFGs than the Nittos.
I would go with Nittos and just live with the fact you can't go road racing at speeds over 100mph with them. If you are going to do that, you most likely have the funds to have a set of 4 corner-carving tires mounted on a different set of wheels that you can slap on for those occasions.
All this being said, nothing short of a racing slick is going to handle 560rwhp/560+rwtq in 1st gear. It's just not going to happen with a short-sidewall radial, my friend. But even feathering the throttle and short-shifting 1st gear, I can pull 0-60 in 3.4x seconds consistently with the Nitto DRs. I'm sure it would be sub-3 seconds with slicks and a banzai launch, but slicks or DOT slicks are useless on public roads.
