When you're oversteering, the rear tires are skidding. When you're understeering, the front tires are skidding. The tire sizes and load distributions are different, so the sounds will be different, too.
But you shouldn't need to hear the sound, over/understeer is something you should feel in your SOTP (and on a wet track, there won't be any sound). So don't worry about the sounds, focus on what the car is actually doing.
