Water Temp- How High is High?

I have a question to those who are tracking their Z06’s. Specifically you must be using a stock radiator and:

1. See high oil temps – above 250 F – No oil cooler
2. Or are using an air-to-air oil cooler
3. Or have first hand knowledge, like a friend, and you where out at the track with them.

What is the highest on track water temps have you seen?

Background: I had been tracking my Z06 and after seeing 290 F in 75 ambient temperatures I installed a DRM oil-to-water cooler. Oil temps where in the 240 F range and water temps around 230 F in 95 – 100 ambient temperatures. I track the car in the Texas area. Very long story, but I removed my DRM oil-to-water cooler and everything is stock. I am planning to go back to the track and I will need an oil cooler.

An air-to-air cooler cost wise is very nice, but I am worried about my water temps. I ran into some folks who are running T1 in SCCA last year. They could use an air-to-air oil cooler, but had to use the stock radiator. They were running some high water temps, 260 comes mind. Thus my concern.

I have stock radiator and air to air oil cooler. Hotest race so far was here in Memphis in the mid-70s. Oil temps were stable at about 235 (return from cooler temp - guessing about 265 out to cooler) and water temps were stable at 220 for a 25 minute race.
I do run with the heater on to pull more heat out of the coolant. I also have Redline water wetter in the system. Not sure how much either of these helps.
JOEZ06 just ran a track event in South Florida when it was very hot. I remember him saying his oil temp was 285 (out to cooler), but don't remember him saying his water temp was a problem.
Something I have learned after talking to several people with remote coolers is that the port used for most of these adapters is where the oil temp sensor is. Depending how they are made, it may tap in on the path out to the cooler, or it may tap into the port on the path back from the cooler. My last DRM adapter gave temp going to cooler. My current adapter gives temps returning from cooler. When comparing oil temps, make sure you are comparing apples to apples.
