There isn't a whole lot of easy stuff to do with these cars to drop weight, GM did it for us.
My car weighed 3122 with a FULL tank of gas witout me in it.
As for weight loss, I would look at Replacing the drivers seat with a manual/race seat. The passenger seat apparetly doesn't weigh much as it lacks the power everything. You can also go to lighter wheels/tires for the track. Then it is up to serious things like pulling the AC, and ripping up the carpet, we don't really have isulation that can be removed from under the carpet itself.
Other than the above, you can always go on a diet (few folks can't stand to lose a few pounds, I sure could). Headers and an X pipe are also supposed to weigh less than the stock cast iron collecters and cats. The Ti exhaust it very light as is.

I had a chunk of my colon removed along with my apendix and that was good for about a 60 pound weight reduction. Oh wait, you meant the Z, sorry different topic all together.
I seem to remember that on the Z, reducing the driver's weight is worth around 1 hp at the wheels/6 pounds lost. Good incentive for me. I could stand to lose around 25-30.

I think 1 hp at wheels per 6 lbs is a little optimistic. If you take an average car at 360 rwhp and assume track weight of 3280 (car plus driver plus fuel) that is a weight to rwhp of about 9 lbs per hp. So 30 lbs is probably closer to the equivalent of gaining 3 hp.

You can get weight off these cars, but... what is your desired end state for the car? Do you want a daily driver suitable for occasional use at the track, or a dedicated track car. If you want a daily driver, it will be hard to remove weight without spending $$$ on the stuff DJ listed above.
If you just want a track car, you can start ripping lots of stuff off the car. My car is dedicated track car and has many things removed including AC condensor, compressor and hoses, radio, radio speakers (and those are heavy), air bags, mufflers, driver's side seat (and motors are heavy), windshield washer fluid, seat belts. If I took out the side windows and motors I could shave another 35 lbs or so. Clearly, this all makes its suitability for daily driving questionable.
But, my car has many things added as well including about 160 lbs of roll cage, six point harness, racing seat, fire extinguisher, accusump, oil cooler, tranny cooler.
After all is said and done, my car weighs in at just over 3100 lbs empty. SCCA T1 class weight is 3280# at end of race with driver and I can get pretty darn close to that.
