Here is a question for all you techies. Are aftermarket thermostats better (lower temp than stock) for performance and reliabilty? I have noticed they are available.:(

Depends, but personally, I would stay with the stock stat, unless you are racing consistantly.

In stop and go traffic, I see both coolant and oil temp around 210-220 F, is this acceptable? I'm just a little nervous cuz I used to have a cooler thermostat in my LT1 Camaro, and the temp would be aroud 190 under the same condition.
